Delicious Home Made Sauerkraut
Sauerkraut can promote digestion and boost the immune system. It is also said to increase energy levels, contribute to heart and bone health and can help reduce asthma attacks. Here is a tried and tested, simple recipe which only takes a few minutes to make.
Ingredients
1 white cabbage
Sea salt
1 fresh turmeric root
Method
Peel off any rough leaves from the outside of the cabbage then weigh it. Slice the cabbage into a large bowl with either a knife or mandoline. Work out what 2% of the weight of the cabbage is. then add this much salt to the cabbage.
Peel and finely grate the turmeric root (with a glove if you don't want a yellow hand) into the cabbage/salt mix then put everything together pressing the cabbage with your hands.
Leave for an hour then mix again. The cabbage will have released liquid. Pack into wide necked jars pressing down firmly. Cover the kraut with another smaller jar or pot filled with brine. This weight forces water out of the cabbage and keeps it submerged. There needs to be a layer of liquid on top of the cabbage to keep the air out. Leave to ferment. Check after a few days and start to taste, the flavour will develop over time.
